I had a question on "off cuts" I have made the SAWHORSE DESK

It turned out great,and I love it, but this lead me to some questions. For the off cut I used the 10 degree bevel on my miter saw. I am thinking of designing some of my own plans with angled legs and supports and want to know how to determine how much off cut I would need when figuring for certain lengths. I am sure some math is involved. Also how do you know to use bevel vs miter for the off cut.
