Neither one. Every time you unscrew a joint, it gets weaker.
Make the headboard and foot board separately, and use metal bed hangers on the side rails.

pocket screws are superior to nails for holding joints together ... but they do a horrible job of attaching trim.
Two entirely different functions, really.
